Yuca with Huancaina sauce

Crispy fried yuca (also known as cassava) sticks are called "yuquitas fritas" in Peru. They are served with with huancaina sauce, which is a spicy cheese sauce that's a Peruvian favorite. The yuca sticks are creamy on the inside with a golden, crispy crust. The two compliment each other beautifully, it is the perfect way to start off your meal!
