Choila is a typical Newari dish and considered a necessary part of any festival. It has developed over centuries among the Newar people living in the Kathmandu valley, rich with spices. This version includes diced pork, marinated and oven roasted charbroiled in Nepali spices and herbs.

Baigun Bharta (also spelled as Baingun Bharta) is a smokey roasted eggplant mash that is very popular in North India. It is effectively a fire roasted eggplant mash cooked with many spices.
