Enchiladas (Meat) or Chile Relleno (veggie)

Enchiladas have been part of the Mexican cuisine since the time of the Aztecs where corn tortillas were wrapped around fish and enjoyed in by the valley of the lake that is currently Mexico City. This delicious version uses salsa Verde and Serrano peppers. 

Meat option includes chicken

Ingredients: Salsa Verde, tomatillos, onion, serrano peppers, black beans, onion,  garlic, oil.

Veggie option: Chile Rellenos are widespread across latin america but each country has its own flavor. This authentic Mexican version is made with One roasted poblano chile stuffed with Salazar queso fresco and smothered in tomato sauce. Served with refried black beans and handmade tortillas.
